3-Meal Prep: Thai Tom Yum Fried Rice

Makes – 3 meals Time needed – 15 min

Here’s what you need:

  • 350g chicken breast, sliced

  • 300g cooked basmati rice

  • 1 tbsp olive oil

  • 1 red onion, sliced

  • 2 cloves garlic, sliced

  • 2-3 cili padi, optional

  • 2 stalks lemongrass, sliced at the white part only

  • 4-5 kaffir lime leaves, cut using a scissors

  • 200g button mushrooms, sliced

  • 200g snow peas

  • 1 tbsp tom yum paste

  • 1 tsp fish sauce

Here’s how you do it:

  1. Heat a non-stick skillet on medium high with extra virgin olive oil. Toss in onions and garlic and stir-fry for 1 min.

  2. Add in lemongrass, cili padi and kaffir lime leaves and stir-fry till fragrant.

  3. Toss in chicken, and stir-fry for 2 mins before covering it for another 5 mins.

  4. Add in mushrooms and snow peas. Stir-fry for a further 2 mins and then add in tom yum paste. Mix well.

  5. Add in cooked rice, and stir it through till it mixes with the rest of the ingredients.

  6. Make a well in the middle of the pan and break two eggs. Let it cook for 1-2 minutes. While waiting, add in fish sauce.

  7. Give it a final stir and remove from heat.

  8. Serve hot or let it cool for one hour before dividing it into three meals.
