French Toast with Bananas and Almonds

Makes 1 serving.

Total time: 10 minutes.

Ingredients:

  • 1 egg

  • 1/4 cup fat-free milk

  • 1/2 teaspoon vanilla extract

  • 2 slices whole wheat bread

  • 3/4 banana, sliced

  • 2 tablespoons 0% plain Greek yogurt

Preparation:

  1. In a shallow bowl large enough for a slice of bread to lay flat, whisk together the egg, milk, and vanilla.

  2. Heat a medium skillet coated with cooking spray over medium heat. Dip the bread into the egg mixture and cook for 2 to 3 minutes on each side, or until both sides are browned and slightly crispy.

  3. Top with the banana, yogurt, and almonds.
