French Toast with Bananas and Almonds

Ingredients:
1 egg
1/4 cup fat-free milk
1/2 teaspoon vanilla extract
2 slices whole wheat bread
3/4 banana, sliced
2 tablespoons 0% plain Greek yogurt
Preparation:
In a shallow bowl large enough for a slice of bread to lay flat, whisk together the egg, milk, and vanilla.
Heat a medium skillet coated with cooking spray over medium heat. Dip the bread into the egg mixture and cook for 2 to 3 minutes on each side, or until both sides are browned and slightly crispy.
Top with the banana, yogurt, and almonds.
